Kyoto Prefecture and its neighbor Hyogo, are the top two prefectures in terms of sake production. This is, in part, thanks to a perfect climate, fresh springs, clear mountain run off, and fertile soil.

Mukai Sake Brewery
This unassuming brewery in the quiet seaside village of Ine produces “Ine Mankai,” a sake made from ancient red rice and distinct because of its blush-wine appearance. Mukai Sake Brewery’s head brewer is female, in an industry typically dominated by male brewers. Her sake has garnered the attention of Michelin star restaurants worldwide, having collaborated with restaurants such as Noma, in Denmark, and The Jane, in Belgium. Mukai’s sake was also served during the 2019 G20 summit.
Ikekumo Sake Brewery
Located along the Yura River in Maizuru
A family run brewery with small batch production and big flavor. Ikekumo’s sake offerings include sake made from pesticide-free local rice.
Takeno Sake Brewery (Yasaka Turu)
Located in rural Kyotango
A family run operation on it’s 6th generation, the head brewer has a chemistry background and a creativity to match his expertise. The brewery produces a range of sake, including a trio of specially produced bottles that sell for upwards of 35,000 yen. Takeno Sake Brewery also produces limited runs of some truly exclusive sake, which sell for over 100,000 yen a bottle. They sell internationally as well, and have collaborated with establishments as prestigious as The Four Seasons.
