The name “Aceto” means vinegar in Italian. A natural choice as the restaurant is owned by the world-renowned Iio Vinegar Brewery. Because the vinegar brewery is unique in that it manages the entire process of vinegar brewing, the restaurant benefits from locally grown, pesticide-free rice (which the vinegar brewery has been using in their products for 60 years), to locally produced condiments like vinegar. The region is also home to incredible seafood and even wild game, which Aceto features in their Italian cuisine. They offer a variety of drinks as well, including an organic purple sweet potato vinegar drink that promotes anti-aging and well-being. This restaurant is a must experience for foodies.
