Hitotsubu is a restaurant specializing in set meals and pays close attention to the ingredients, choosing natural, healthy products from around the country.. People who come to Hitotsubu all agree, “It’s safe to eat here.” The blackboard displayed inside the restaurant details not only the production area but also who made the food. They particularly focus on chicken from the Hasugamine Farm in the local Kambayashi area of Ayabe. When the owner, Noboru Waku, visited the farm, he was surprised that the usual smell of livestock farms was not present. From this provider, Hitotsubu offers a chicken and egg rice bowl, and the most popular menu, chicken nanban. Furthermore, the basis for a lot of Japanese cooking is dashi. fresh and clean water is further purified and combined with aged Rishiri kelp, Soda bonito, mackerel, and dried shiitake mushrooms every morning. It’s pretty much a guarantee that you won’t waste a drop of this incredible broth. Locally-produced umeboshi and miso made using old-fashioned methods are also sold here.

At this store, the rules are "use local ingredients as much as possible", "do not compromise on ingredients", and "do not use chemical seasonings". Be sure to visit the site and examine the ingredients used. For example, we didn't have a pork option on our menu for 15 years. However, four years ago, I happened to find some excellent pork [Hachimantai pork], in Akita, and the pork cutlet rice bowl was added. It may be a bit of a pain but we only serve dishes we can be proud of, and dishes that are safe for children to eat.
Chicken and egg rice bowl
We use Okutamba [Kuromine Chamo] chicken and their fertilized eggs that have been carefully raised on feed, with attention paid to their age and breeding density. All this is done locally at [Harugamine Farm] in Ayabe City. 1,380 yen (tax included)
