Fines Herbes is a creative French restaurant on a hill overlooking the inland sea of ​​Amanohashidate. The restaurant is annexed to the Hashidate Bay Hotel, which is quite convenient for guests. Kyoto by the Sea is an area with a strong food culture with many restaurants specializing in Japanese cuisine. Fines Herbes offers the rare opportunity to eat locally while experiencing french cuisine. The bistro-style lunch is casual and the dinner offers a wide range of tasting courses as well as dishes à la carte. The main ingredient is seafood, which is purchased every morning from a neighboring fishing port. Eating seasonally is a great way to get more out of your experiencing an area, and the Sea of ​​Japan has a wide variety of local food every season, such as rock oysters, yellowtail and crab. The vegetables and herbs are mainly raised by the staff on the premises. The restaurant has two aims. The first is to express each season through the dishes. The second is "Food Mileage Zero." In order to mitigate Fines Herbes’ contribution to global warming, the restaurant makes use of ingredients that are readily available locally and seasonally.

After training in Kobe, I decided to return to Kyotango City. Cooking here is more exciting and fun because you can really see where the food is coming from. We hope our restaurant channels the South of France with our open-kitchen style interior. We offer French cuisine, but we aren’t trying to create an upscale atmosphere. We want people to be comfortable and casually dine with us. Besides the cooking, our wine is personally selected by the restaurant manager. We aim to have a selection that reflects our love of wine! We also have a designated “Cafe Time,” during which we offer dessert plates that appear in our tasting menus!

Bistro lunch

Select from a main dish of fish or meat which is adorned with seasonal ingredients. A popular, filling lunch featuring authentic French for just 1,000 yen! Comes with soup and bread.

Steak lunch

This lunch features a filling 150g portion of steak. The special sauce is filled with the umami of onions and the fruit-flavor of red wine, the sourness of balsamic vinegar, and boldness of horseradish.
