Founded as a udon restaurant at the beginning of the Showa era, Torimatsu is currently a famous local restaurant that prepares important meals. This is because Torimatsu prepares traditional dishes that are an indispensable part of celebrations and feasts in the Tango area, such as barazushi, chawanmushi, and sashimi. The unique "Bazurushi" (a lasagna-looking sushi dish) is traditionally made at home and as such has different ingredients depending on the maker. Here, sushi rice has been spread out and covered with crumbled grilled mackerel, and then another layer of sushi rice is spread on top, and that is topped with more mackerel, shiitake mushrooms, and shredded egg. Torimatsu’s "Tango Set" meal, gives the customer a taste of the three major specialties at once. There is a rice bowl with local fish sashimi, local chicken, roasted eel, lily root, and more. You can also take the “barazushi” with you in bento form, and it is also on sale at [Roadside Station Kyotanba Ajimu no Sato] and in Kyoto.

When I first decided to cook, I trained at restaurant Takebayashi in Uji, south of Kyoto City. After that, I returned to my hometown, Kumihama, and have been here ever since. There are many people who rely on our cuisine for important occasions, such as dinner parties, auspicious occasions, and celebrations with family and friends. For those important days, I am grateful that people have entrusted Torimatsu with such an important task. While cooking, I always keep the customers in mind and try to create cuisine that will make people smile. We have a large menu, with various dishes from set meals to kaiseki dishes. Feel free to come on your own or in a group.

Tango set (A)

A classic set of local specialties in Tango, barazushi, sashimi, and chawanmushi. We use seasonal fish for our meals. This season’s sashimi is turban shells, swordtip squid, two types of sea bream, and Japanese Spanish mackerel. 1,850 yen

A lineup of locally sourced Japanese Spanish mackerel, swordtip squid, yellowtail amberjack, abalone, etc., all in a gorgeous nigiri set. The sushi rice used is local from Tango as well. 2,600 yen

Tamba Chicken, chicken thigh

Local Tamba Black Chickens are used for this dish. The meat is crisply cooked in a special high heat griller in order to fully capture the flavors of this local delicacy. An exciting dish seasoned only with rock salt. 800 yen
