If you want to fully enjoy the seafood of Ine Bay in the Japan Heritage town of Ine, go to this restaurant. The knife skills of Katsuaki Iemoto, the former head chef of the well-established Aburaya Inn, is enough to awe anyone. With its outstanding fish-connoisseur chef, the dishes here are made with fish procured every morning. For example, the set meal is a luxurious collection of dishes that highlight the freshest fish with three cooking methods: boiling, grilling, and sashimi. The dishes are beautifully seasoned and keep the locals and fishermen coming back. They also go well with rice. You can also find rare fish such as locally raised Japanese sea bass and locally raised Ine tuna. It's a small restaurant, so be prepared to wait.

Born in Ine Town. I have been a Japanese-style chef since I graduated from high school over 40 years ago. Previously, I was the head chef of Aburaya Inn in the town of Ine. At the time, it was a job that required offering delicate food with multiple courses. This cuisine necessitates perfect cooking methods for each of the fresh fish I use to bring out the most in the fish. I make 50 to 90 servings a day by myself, which is a little difficult, but I am enjoying my work. I was so absorbed in it that I paid no attention to the profitability, and our was a little angry with me!
