Energizing Food in a Rejuvenating Forest

Ayabe Onsen is located in the Kambayashi district where “satoyama” countryside life is blended into the environment. Quite close to the onsen is the national treasure, Niomon Gate and hiking trails. Ayabe Onsen is famous for being a skin beautifying hot spring, with the natural waters sourced right there. The restaurant inside the hot spring facility is full of local love, using seasonal ingredients that showcase the range of what Ayabe has to offer.

All the ingredients are endorsed by the knowledge staff, who are familiar with local ingredients, such as "Kambayashi chicken", a local free range chicken of exceptional quality and taste, and award-winning Koshihikari rice, which is procured from a contract farmer close by. The chefs create dishes using all seasonal ingredients, such as ayu (river fish), matsutake mushrooms, and wild boar.

After working at a restaurant in Kameoka City for about 30 years, I returned to my hometown, Ayabe City. “Rojimon” cuisine using seasonal ingredients from gardens pairs easily in dishes, making it fun for me to make micro-seasonal changes to the dishes from day to day. The restaurant has a wide range of dishes, from set meals to cake and cafe-esque dishes, kaiseki meals for people staying at the hotel here, and even Hawaiian BBQ. And the cherry blossom trees that can be seen behind the glass windows are wonderful. Let the mountain forests inspire your order.

Pork cutlet Curry

A local curry with deep vermillion color of National Treasure, Niomon Gate (nearby). This is a large-portion meal, with Kyoto Wagyu beef used in the curry roux and topped with thick-sliced pork-loin cutlets.
